Hello Luke:
Many people in here would probably be against mixing species but in a well planted terrarium I think you could probably get away with it. The problem is that Red Eyes are so shy so you have to be sure they are feeding as well as the anoles. If they feed regularly and are well established I don't see a problem.
As to your question I wouldn't keep more than two Greenies in with the Red Eyes.
