The only way to transport your animal, allowing it to have access to food and water, and to insure it isn't left out in the sun, is to personally transport it yourself.
Sorry. I am sure that is not what you wanted to hear. Any carrier, including Delta these days, will treat your animal like any other package, without taking any consideration to it being a live animal. You will need to package it with this in mind. Forget about food or water. Considering that it should only be shipped overnight, food and water isn't necessary anyway.
