Substrate question and obesity question

Hi, I wonder first of all, how do you tell if a horned frog is too fat? They all just basically look like a tub of fat anyway. I don't see how you can tell if they are lean or not as they all just look like different sized lumps of fat.

Secondly, I want to ask about substrates. I see a lot of sites recommending things like Eco Earth, those coconut husk bricks that were compressed and when put in water they swell up 8 times. Well, I bought a brick, because the fertlizer free soil I was using before was really yucky. However, I was just told by someone that those bricks absorb water so well and expand, that they will absorb all the water through my frog's skin and dehydrate him. Granted, I will use the substrate after the brick has been pre-expanded by soaking and also be kept moist, but is there any truth to that claim? Or is it just some BS.
