I want to experiment with sculpting some of the plastics such as Balsa foam, Cari-foam and Crea Stone with something called "Magic Smoothie" (TAD plastics) to form the ripples and such, or perhaps set in some graduated slate slabs. I do have two water falls of lava rock, but these are in a paludarium situation, not really "built," per se. The rest are cork bark, which are more like drip walls than falls, and tree fern panel drip walls, not truly built. I did try Winterstone, and did a whole falls and stream thing from it, but it tends to wick the water out, and after a couple of years, I just pulled the pump and let the moss cover it. The Germans sometimes use Styrofoam and something called Rockoflex, which I don't think is available in the U.S., but I'm thinking that the Magic foam and Magic smoothie may be similar.
