Few questions about diet and bite

I've seen a few videos online where it appears that the owner is feeding their snappers either shrimp or immitation crab meat. I can understand feeding snappers shrimp but is immitation crab meat safe? It seems like there might be plenty of unatural preservatives in it.

Also, I have been bitten by a snapper before, but it let go. Once again I have seen video where a alligator snapper bit down on some guys finger. He got the mouth open with some kind of tool without hurting the turtle. What tool is this, or what other methods have you personally used without hurting the turtle?
