Brumating DIs?

My DIs and the adult male chuck that lives with them have been slowing way down for the last few weeks, and I want to breed the DIs in the spring, so I guess that I need to brumate. They have slowed on their eating significantly, but we have 80 degree days all through the winter here, so they did come out to eat this week. So here are my questions.

Should I cut them off food entirely and for how long before I put them down?

They will come out even when the lights aren't on yet in the morning on warmer days, so at what temp should I maintain them so that they will sleep, or should I cover the viv or box them so that they can't see light?
