I have never kept chucks outdoors either. I think Gus at Rio Bravo Reptiles may know a lot more about the outdoor housing. If you check his website out, I think he has instructions on how to build an outdoor cage like his.
You live in a perfect place to house them outdoors all year round, as long as they can escape the temperature extremes.

As far as diet goes, I have found wild ones who were obviously eating creosote, as it stains their faces and chins. I would not say it is the main staple of their diet. They seem to be prety opportunistic about food. I have seen them in trees eating seed pods. A lot of their scat that I have seen in the field contains wild grasses. They also eat the leaves of ocotillo plants. It would be easier for you to just feed them a good mix of fresh leafy greens and various other veggies from the grocery store. Did one of the care sheets you found have a list of good veggies?
