Edible cactus?

I just got a hatchling leopard tortoise, and I am trying to ensure a variety of food sources for him/her. I just planted a big tub of rye and wheat grass, so hopefully he can go grazing even before the snow melts...

I also bought a pack of mixed cactus seeds. Are there any cactus species that AREN'T edible? Removing the spines on some of them might be a pain, but I figured it would be worth a try.

The mix includes:
Saguaro
Cane Cholia
Versicolor Cholia
Compass Barrel
Strawberry hedgehog
Florence hedgehog
Organ pipe
Old man cactus
6 types of prickly pear
Cardon


Are any of these toxic or less nutritious? Thanks!
