Hey there! It's been nearly 20yrs since I've done much of hiking, camping & rappelling and my brain's gotten a bit foggy. It depends on whether you want 1 - 2day excursions or an excursion lasting several days.
The Benton MacKaye Trail Link 1 Link 2 begins in the Blue Ridge,GA area, which is about 30 minutes from me. I'm sure you know that you could get on it & go all the way to Cape Cod, Maine. There are quite a few trails along this route to where you could make your hike as long as you want. I liked the Rock Creek, GA & Stanley Gap, GA pretty well. Link 3
If you're looking for more of a campground-type setting, check out Vogel State Park near Blairsville, GA.
For a beautiful 1 - 2day excursion Jacks River Falls in the Cohutta Wilderness, near Chatsworth, GA, is hard to beat. Check out that link for photos, directions, etc...
Benton, TN has a few decent rock faces if you're into climbing and/or rappelling.
Robbinsville, NC & the Nantahala Gorge (NC) are a few other places you might want to look into. The Joyce Kilmer Memorial Forest is nice and there are some trails, camping in that area.
The photo below is of my brother & wife during a rappelling outing in Benton, TN 19yrs ago. My brother and his son came to visit and my wife and I took 'em rappelling.
