For what temperature range? What material are you measuring? Air, liquid, surface, etc? Fast-changing temps or slow-changing temps?

How much do you want to spend? All about cost. The higher the accuracy, the higher the cost. The better able to respond to fast changing temps, the higher the cost usually.

Temp range is important. Thermistor devices work great for example in the "herp-related" temp ranges. If that is your application, consider a handheld with thermistor probe.
