Deer Fern Farms is the best website I know of for describing the general differences in the species. From my experience, I'd suggest a Mali or Ornate over a Saharan. Each individual lizard is different, of course, but in general, Saharans are more skitty and prone to stress. Malis are pretty hardy. Ornates are hardy and usually pretty friendly, though more expensive. Get captive bred, whatever you choose - definitely worth the higher price.
