While I'm not to familiar with Ackies in particular or in their specific needs I am familiar with standard monitor husbandry and it does sound like you have 3 healthy monitors.
They will need at a minimum a couple of weeks to acclimate to their new environment. That enclosure does seem to small for 3 growing babies to me, however I could be wrong. As for them hiding that is to be expected considering they probably think your going to eat them every time you enter the room. I wouldn't expect to see much of them for a little while, just continue doing maintenance tasks and eventually they will realize your their food source.
Your temperatures look good but I would raise the humidity to at least 60 %rh.
So to answer your questions specifically 1) No need to continuously check on them, if your husbandry is correct (which it seems to be) they will be fine, let them have their space. 2) Don't worry if their not out when you enter the room, chances are they hear you approaching before you even enter the room and scatter. Keep in mind that to them you are the predator and survival instincts kick in. 3) Food disappearing is a sign of healthy youngsters.
