Hi, I`m living in the U.K just now so can`t give specific brands available in America. Any decent quality water based polyurethane varnish is good, use at least 3 coats, better 4 or 5. If you can get the "quick drying" type you could almost do it in a single day, then leave another 24 to 36 hours to dry completely and it`s ready for use.
The oil based varnishes take much longer to "cure".
You will need something more substantial for the bottom and sides up to substrate level, maybe line with FRP (fibreglass reinforced plastic), or maybe you already planned to do that?
