I've been breeding them for quite a few years and have had the best results with temps in the 75F ambient range with a slightly elevated basking site (80F). Water temp has always just been room temp of 70-75(possibly slightly elevated due to submersible filter motors).
As far as I've noticed, it is not necessary to brumate them unless you are trying to breed. I've kept juveniles awake while growing for the first three years with no negative consequences.
The majority of their diet consists of night crawlers with occasional f/t pink mice. I rarely supplement, but when I do I use Repashy carnivore dust.
