Either of the two you mentioned are good for beginners. You might consider the Redfoot to be a bit easier because it does not hibernate. I have not kept Russian Tortoises personally so am not certain if they will do fine without hibernating or not. Perhaps someone else can answer that? I do know my Western Hermann's Tortoises have been fine if kept active all winter.
