Water Lilly unhealthy?

Well we have 3 hardy lillies in our 1500 gal pond. Pond has a SAVIO skimer and UV light. Crystl clear. We also add barley extract and bacteria. Well our lillies bloom a few times each season but we never have more than 4-6 pads on any of the plants. The worst part is the pads stay purple, never turn green. We bought them here at pond store green and great and they go through a winter and there purple end of story, never turn. I live in Santa Fe N.M where it is quite warm in the summer. The pond is in full sun for 90% of the day. Thanks
