Im also new to the hedgie experience, but I've done all my research lol. Hissing and curling up is a sign of feeling threatened. The best thing to do is just leave her in her cage and stay nearby until she gets used to you being around. Once she's calm enough to where she doesn't hiss at you, try give her quills a lil massage. She should uncurl after a while, but the process is gonna take a few weeks til shes comfortable with you. For now, just let her enjoy your company by presence alone.
