Introduce her to it a little at a time, and monitor her poo (as gross as that may be ). If she's pooping good, solid poo, then you can give her more fruits/veggies. If they're looking a little soft, keep the amount you're giving her the same until they firm up. If they're runny or very soft, give her less.
What works for me is giving them more than they can actually eat in the morning, after I have breakfast or before I go to work. Then, when I come home I switch out the fresh food for lab blocks so that they have those all night. Give about 3/4 veggies, 1/4 fruit. Fruit will give your rats diarrhea if you give too much, but you almost can't give them too much veggies.
