Training a baby not to BITE!!! Help!

Hi guys,
I've taken on another new horsey responsibility. Our friend up the road has a mini that just foaled, but he's so so so busy running the entire place, as well as his own business, there's no one left to play with the horses! I've made a deal with him. I'll work with the new baby mini and friendli-ize him if I get to name him.
So... quirk number 1... BITING!!! This thing wants to EAT ME!!! It's obnoxious. I was brushing momma and the whole time I was swatting him away like a mosquito. At one point he finally did bite my leg, good and hard. Geez that smarts!
Everyone screams all the time never to ever hit a horse, especially in the face, it makes them head shy, traumatized, yadda yadda... well, then what the heck DO you do? I've been bopping him on the nose, but I know he's not getting the message because he just tries to bite my hand instead of whatever he was going for. Maybe they make a bitter apple for horses? I'm darn tempted to get a horse shock collar... Clinton Anderson certainly seems to like them!
And no I'm not really getting a shock collar, I don't really have the money for that.
