The rationale for having somehting for that in the dish is not to help the tarantula drink, it is to keep crickets from jumping in the water and drowning (crickets are dumb). Having media in the dish allows them to jump out. However, the crickets will defecate on the media and various other things will get on the media and it will harbor bacteria, which you will never get rid of without tossing the media. It is easier just to use no media at all, and the water will be healthier. If the cricket thing is an issue for you, then putting a flat piece of rock in the dish diagonally will give crickets a slant to be able to grab onto to get out, and still leaved an open dish for the tarantula to drink out of.
