How many crickets do I feed my mantis?

We found a praying mantis in the backyard today, so I brought it inside and put it inside a reptile cage. It's the cheap plastic ones with a plastic mesh lid that snaps on.

I fed it two large crickets, but I can't find any information on how often and how much to feed them. It has six abdomen sections, so I believe it is a female.

Also, I used a wood/mulch type of substrate, so should I mist it? It's very dry in Southern California, so I'm not sure it needs the moisture.
