Roch Leg Problems

Hey there everyone. I've had my hissing roaches for exactly 1 year. They have been doing great until just last week when I noticed that their first leg segment (their feet!!) were MISSING. I check on them often so this happened rather quickly. This greatly disturbs me!! Is there a type of leg rot that they can get? They are living in a large cookie jar (there are only two of them) filled with black magic potting soil. There is a live plant (not sure what kind but it loves the closed glass jar) and there are some small rounded gravels on the surface. We usually feed them apples, bananas, kale, lettuce etc.

Is it too moist in there? There is some condensation on the glass walls but its not so bad that you cannot still see into the jar. It also mostly occurs near the top half of the jar. Is that possible? Is this a type of fungus? My poor bugs
