In many cat registries (including CFA), the Persian and the Himalayan-Persian are the same breed ... just different colors/pattern.
I am currently owned by 7 Persians and Himalayan-Persians (as CFA calls them, or used to), and have had many others in the past including foster cats through the Persian rescue I foster for. Despite most people thinking they are just large furry lumps, Persians come in many sizes and head/nose shapes, depending on the breeder. I've had 5 pounders to 20 pounders, those with nose smashed up between the eyeballs and others with pretty doll-faces, and some that are active and skid around the house, while others are more stereotypical.
If you are considering buying from a breeder, do research, ask questions, look at the parent/sibling cats, and ask more questions of the breeder. There are also many, many Persians in rescue in need of good homes, so that might be a good option too.
