Probably the bite was a startle response to your hand sliding down her back unexpectedly. This may be a one time event. If you can sleep for a while with your hands tucked under the covers she might stop pestering you for strokes.

If she is aggressive otherwise, try playing with her using a feather wand toy.

There is also a liquid product called Bitter End or Bitter Apple that you could put on your hands at night. It doesn't smell bad and won't hurt your skin, but if she bites or nips it tastes really bad to her.
