Cat Humping

Hi, this is my first post. I seem to have missed the introductions board, so if someone could point the way I would be most appreciative.
We adopted Greystone, a 2-5 year old persian about a year ago. He was declawed when he came into the shelter, but was not neutered until right before we brought him home. Greystone is unlike any cat I have had before and is great fun all the time
The problem is, he has taken to humping things. Especially my fathers leg, but anything will do in a pinch. And screaming like, well, a cat in heat when he does it. I've never heard of a cat doing this and have no idea why he would start doing it now.
We have tried a squirt bottle, which works for a minute, but as soon as our gaurds are down, he's back and mounting again. His other favorite target is the couch.
Why is he doing this and how can I make him stop. I swear it's like lving with chester the molester.
