You probably should wash your hands so the cats don't associate the new cat smell with you. However, you should try exchanging their scents by rubbing the new cats with a towel and then rubbing the old cats and vice versa.

As for the not- eating, this could be a serious issue. Keep an eye on the cats and if they aren't eating or drinking by tomorrow then you'll need to call a vet or an emergency vet - don't wait until Monday! Cats can develop fatty liver disease which can be fatal if they don't eat.
