You definitely need to cover your bedding with plastic when you are not around to watch her, until this problem can be resolved.
Has she been seen by her vet and checked for a UTI? If your vet says that she is fine healthwise and the problem is behavorial, then I highly recommend Piddle Pants.
Piddle Pants worked for my two cats who were having a 'spraying war' to determine the 'top cat position'. It's been a month and a half to two months since I've had any urine marking of any kind in my home, thanks to the Piddle Pants. These two wore them for a short time, then when out of the pants, have not gone back to spraying. It worked for me and might work for you as well.
