I definately agree that this cat is in pain, hence trying to avoid going at all. Not normal, not good.
It's not the cat's fault that your vet cannot diagnose the problem. Perhaps giving Flaxatone might help until you can get another opinion and take a stool sample in. Possibly crate the cat for a day or so and monitor her behavior while crated so that you can describe to the new vet what she does when confined next to a litterbox as well.
Give the cat a chance because she is obviously trying to tell you soemthing is wrong.
