The cat is definitely upset about the change in her routine. It might be useful to talk to the vet about putting her on some anti-anxiety medication for a while, also try one of those Comfort Zone plug-ins with Feliway.

Can you close her overnight in a small room with some bedding, food, water and the litterbox (without the mat to catch the excess litter)? She may re-train to the box. Also try using Cat Attract litter which you can buy on-line if you can't find it locally.
