First, thank you so much for taking in this special cat! My immediate reaction is that something really spooked the poor thing and now he's watching out for it. Were there any marks on him anyplace or did you find anything out of place in your home? However, there could be something physically wrong if he moves differently, too. Is his slow movement just caution or perhaps because he aches somewhere? Does he still respond to your touch the same? If it continues, I'd probably take him to the vet to be checked.
