I don't have any experience with deaf cats, but my first instinct with any behavioral change is to take the cat to the vet for a check-up. I know it is stressful for your cat to go to the vet and that might make matters worse, but he should be seen. Maybe the vet would make a housecall if you asked?
Otherwise it sounds as if something might have spooked him. Let us know what happens.
