Give them time. They're just babies and it takes time to learn new things! Also, I'll bet your little blue point guy is warming up already--they're all different, just like people, and some are more reserved than others.
As for jumping on your shoulder, that's part of the joy of sharing your world with a Tonk or two. Both mine are shoulder sitters and Eddie is my little leaper. If he decides he wants up he jumps, whether I know he's coming or not! Hint: Ask your vet to show you how to clip their claws, then do it regularly--one a week or so. If you start now, when they are little, they'll just accept it as part of life. And it will make all those landings much less painful.
