For the most part, I like the Cafalon (sp?) or stainless steel for pots and pans. However, I am a true southern girl at heart and still use the good old cast iron skillets and pots when I get serious. Being a true New Yrker, my hubby has never gotten the hang of cooking with cast iorn so he uses the stainless and Cafalon all the time. -----
