Sounds as if he's doing OK. I would just continue what you are doing. He may be in a sort of transition phase hormonally and that will still affect color. Once he seems to be settled down, eating, gaining weight, acting normally you could try the mirror trick. Show him a mirror (for a few minutes) and see if he fires up his full adult coloration.
