Ontop of offering new foods (try superworms, waxworms, butterworms, pinkies, etc) make sure to check your setup. Leos that are stressed due to improper or fluctuating temps and/or a lack of secure hiding places often show problems with their appetites and weight gains. If your setup seems good and he still doesn't gain weight despite a healthy appetite, he may have a parasitic infection. My first leo Beanie had a hard time gaining weight until I took her to the vet and we found a nematode infestation in her stomach. After that cleared up, she gained weight like a champ.
Good luck!
