I know this isn't the only reason for a varying shed appearance, but when the moisture level changes in my enclosures, the moisture level of my leos change too. Basically, if the skin (including that that is ready to be shed) is more moist, it may not look as dry and papery, hence giving the illusion that they may have decided to change their mind. I'm not sure if this is that case for you or not, but just thought I'd throw it out there. Good Luck!
