I'm not sure on the Albinos. Perhaps if you contacted the breeders they could tell you why they have different names. I would guess it's because they've bred them for "high color". Maybe these bloodlines of Ablinos keep their color as they mature.
For the Scarlet Hypos and Pastel Hypos.....
Well, the Scarlet Hypos are intensely colored Hypos that come from a Pastel Dream X Hypo. They have pinks, oranges, and red-orange coloration. Some people say they're "red", but they're really just an intense red-orange color. Of course, they come pretty darn close to red. Pastel Dreams are a proven line of Pastels that can have AMAZING COLOR! This bloodline is proven to add LOTS OF COLOR. 
As far as Pastel Hypos go I would guess they from a Pastel X Hypo breeding. Some Pastels are from bloodlines that are proven to enhance the colors of the offspring, while other's are not. It's always best to get one from a proven Pastel bloodline.
