Covering the sides and back of the glass tank cuts out visual views for the dragon. It also make him feel more secure as he isn't being bombarded with images on all sides (especially true if the dragon is in a high traffic area of the home. Though if the tank is going to be against a wall at the back and if in a corner, another wall on one side, it may be fine to leave these cage sides uncovered. However a decorative backing to the tank does make the inside of the tank more attractive for you as well.
