There are others here who are way more qualified to answer this than I am. But, if she hasn't eaten in 21 months, she may not have the "flora" in her gut to efficiently digest a large rat.
I have a 2kg female that has been off feed for a couple of months. She had been eating small to medium rats before her "fast". Last night, I decided what the heck, and offered her a live mouse. She had it down almost before I had it in her enclosure! She went ahead and ate 3 more, and then I stopped. She may have taken more, but I decided 4 was enough for that meal.
You might try a mouse or two. Given that she's been off food for so long, if she takes them, I would probably let her digest just one or two for a few days before offering more.
