I will take about 50 pictures of a particular animal and usually there is a handful that are really nice and the others are either to light or to dark so I know what you mean about trying to capture the color. I believe I have the same camera a Rebel XT ESO 350D. I am really happy with the pictures it takes. What I have discovered is that if you are in a partially lighted area and use the built in flash that seems to really bring out the colors. One thing about digital you can practice all you want.
