Well, it all depends on what you want. Applegates can vary because San Diego gophers, in their normal phase, can vary with their colors. Some normals have a lot of brick red on the back, some do not. Some have a lot of brown, etc..
If you were wanting Applegates that will turn out to be high white all down the back, then I would go for the highest amount of silver/white they have as babies and stay away from ones that as babies have a lot of orange where the white would be.
