I usually place the sensor about 1/16-1/8 of an inch off the tape itself , so it doesn't get too hot too easy , therfore limiting the belly heat that is supplied

Uhhhhhhhh.....how exactly does that limit the belly heat??? You have the temperature sensor ABOVE the heat tape so it takes MORE heat to reach the cutoff temp., thereby making the max. temp. HIGHER.

I don't understand your logic behind that.
