I tried the moss since my second year and so I don't know if it was experience or substrate that influenced success. I have 100% with moss.
As to humidity. I don't have a guage, I go by the feel of the eggs/clutch. If the eggs are happy I am happy. As to maintaining it. I put the clutch in a closed container with one or two tiny holes and I tend to open it every few days for airflow and checking on their condition.
If you can get a layer of WET under the clutch but not touching it that helps a lot. If the walls are dripping it is too wet.
