My first suggestion would be to stop helping him remove the shed, if you're pulling it off. If you really feel the need to do something, just rub some mineral oil into the old skin and let it do its thing.
There must be a reason for the shedding trouble. I would look critically over your setup and see if there's something that might contribute to the problem. Is the cage TOO dry? Does he have rocks to rub on if he needs to? Does he have good lighting, including UVB? How is his diet?
