Personally I would make sure your conditions are correct...for temps and humidity. Then leave the poor thing alone. My first Sav ate bugs for over a year before she decided she could eat other things. BUGs are their primary natural diet. Just BUGs. Your monitor doesn't have to have something different. Get a nice Hissing Roach colony going and be happy they don't stink like mice.

My 5 yo savs still prefer roaches over rodents. Though it takes way more to fill them up so they get rodents too.
