If nothing was on the surfaces that could've contaminated it, I'd say it's out of shelf life or just a plain bad batch. The tube of silicone should have a shelf life date on it.
If it comes into direct contact with water that could do it, too. But humid air shouldn't affect it that much. I've used to caulk many showers with water all around, and as long as water didn't get into the silicone bead itself, no problems.
