I agree with Carlton

Even if waste and bugs dont fall in and foul the water, bacteria and alge will still grow in it. If a waterfall did anything at all to raise humidity I would be suprised - certainly it would be totally insignificant and not worth the risk. Misting and dripping are the way to provide water for your chameleon and are also a good way to help raise humidity.
