Andi, are you leaving water in the viv or are your veggies overly wet when you put them in? I have heard that too much fluid causes that. Are the beans dry or cooked? Now hat I am in reply mode, I can't see your post, but are you feeding him very much fruit?
As for roughage, I feed mine finch seed and dry ground beans with a little ground Mazuri tortoise pellet mixed in. I just put a small bowl full in each of their vivs separate from the salad and keep it in there at all times, and they snack on it daily.
What kind of substrate are you using?
Another thing you can do is have your vet check his kidneys and liver function. I understand that uros sometimes have problems in these areas, but it sounds like he is super healthy otherwise.
