I use Photoshop in most every photo I put online. I can think of only a handful of photos that weren't adjusted one way or another with Photoshop. They simply have to be. As you said, with film, these adjustments were made in the lab. There's no difference now.
I remember sitting behind a processor, adding cyan, or magenta to a photo to make the colors more true to life. What difference is there now?
Generally, today, colors are fine with an image, but the levels need adjustment, or the contrast.
I almost never sharpen an image. I really can't even think of the last time I did. We're all becoming spoiled on this one! Compare your UNsharpened images to old 35mm photos. They're far higher resolution than any of us used to take with film!
What's wrong with editing photos to make our animals look true to life? I edit almost every photo, and I have yet to post a single photo of any of my animals that actually shows their true colors, anyway, simply because this is so hard to capture with a camera, compared to the eye. Without the little adjustments here and there, no one would have a clue how beautiful our animals actually are.
