"Sometimes" the males know when they're done. Other times, the male will continue to breed "after" the job is done. It all depends on the male.
Sine your males has lost interest and it trying to "escape". That's a good sign.
Since your girl is in shed, you might want to remove the male and offer him a meal. Then put him back in with her after he digest a bit or wait until she sheds to put him back. If he still shows not interest, then his job is done. At least, he thinks he job is done.
I have a male that I "have to remove" as soon as he starts behavior your male is showing. I made the mistake of leaveing him in with the female once. I figured I'd just wait until she sheds and then remove him. The next morning, after he started trying to escape, he had his nose rubbed "RAW". I had to take him to the vet. It cost me 300 dollars in vet visits, but he's fine now, but it could have been prevented.
Since your male is already showing signs of "nose rubs" you should remove him now. Mostly for his own safety.
